We're talking about 'sugaring off' - a rite of spring in the east, when maple sap is tapped and boiled down into the sweet syrup we adore. Sugaring Off, Quebec Style

The cabane a sucre, or sugar shack, is where all the action happens: maple sap is boiled down to a sticky syrup, food is prepared, music is played and a good old-fashioned evening of Quebecois revelry takes place every evening.
